While you might have kicked off the new year feeling enthusiastic about sticking to your nutrition and fitness goals it can be easy to fall off a few months into the dreary, long winter and completely forget what you set out to accomplish. Rather than feel bad about slacking off you can easily get back on track by infusing some creativity into your meals, incorporating delectable, healthy dishes, (like grilled apples!), that add a little variety and a lot of flavor to your plate.
We’ve all been there–eating the same side salad every day can get a bit bland, especially when you’re craving something sweet–but there’s no reason to reach for an indulgent snack when you can stay on track with a dish that’s both satisfying and good for you.
Enter Dig Inn‘s Grilled Apples recipe. The NY-based, fine-fast restaurant group specializes in grain and salad bowls and is known for making nutritious, farm-to-table meals accessible in a New York minute to busy city dwellers looking for a healthy lunch or dinner alternative–and their Grilled Heirloom Apples are so delicious we jumped at the opportunity to recreate the famous recipe.
Dig Inn’s Grilled Heirloom Apples
-3 apples, cut into 8ths and cored
-2 Tablespoons olive oil
-Pinch maldon salt
- Place all ingredients in a bowl and toss to coat the apples.
- Heat up a cast iron or stainless steel pan on medium.
- Carefully place the apple wedges in the pan and cook on one side for about a minute and a half or until golden and caramelized.
- Flip over the wedges, cook for one more minute and then remove from heat to a plate.
- Either serve immediately or chill down before serving. Toss with another touch of olive oil if desired.
