Forget banana bread, everyone is making pancake cereals on Instagram

Show me your sourdough and I’ll raise you pancake cereal. We’ve showcased our banana bread baking prowess, knocked back whipped flavoured milk and even toasted to lockdown life with a Dalgona coffee expresso martini. However, in the fast-paced and fickle world of lockdown’s competitive culinary challenges, a new foodie trend is taking over social media.

Pancake cereal, which is pretty much what it says on the tin, originated on TikTok and has since gone viral across Instagram and Twitter where budding foodies are whipping up mini pancakes and dousing them in all manner of breakfast accompaniments.

Bowls of miniature pancakes slathered in syrup, yoghurt, chocolate sauce and smothered in sprinkles have been popping up all over social media, with the #pancakecereal hashtag amassing over 10 million views on TikTok alone.

The method basically involves whipping up mini versions of pancakes (we have a healthy recipe here if you’re so inclined) and then serving them up with your favourite toppings. Whilst the vast majority top theirs with sauces and sweet treats, some experimental foodies are taking it a step further and crushing up Oreo biscuits or Lucky Charms cereals and mixing them into the batter with Hershey’s cocoa powder to create E number-fuelled bowls.

What you’ll need:

Ingredients

  • 1/2 cup all purpose flour
  • 1 tbsp sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup buttermilk (or milk)
  • 1. 5 tbsp whisked egg
  • Oil to grease the pan

Method

  1. In a bowl, whisk together the flour, baking powder, baking soda, and sugar.
  2. Then add the whisked egg and buttermilk to the bowl, gently combine with a fork, being careful not to over mix, but mixing out all the large lumps
  3. Pour the pancake batter into a squeeze bottle or ziplock bag with a tiny corner cut off. If you don’t have either of these, you can use a teaspoon to scoop it out.
  4. Heat a non-stick pan with oil over over medium-low heat.
  5. Squeeze out mini pancake (or drop the batter by the teaspoon) and cook them until they start to bubble. When you flip them, they should be golden brown. Continue cooking for up to a minute, or until they are golden brown.
  6. Scoop the pancakes out into a bowl and serve with your choice of topping; from butter and maple syrup to chocolate sprinkles and crushed cereal.
