Beef and Mushroom Sloppy Joes

Brown the beef in a very large skillet over a medium-high heat, breaking it up with a spoon as it cooks, 3-4 minutes. Transfer the meat to a plate. Add the oil to the pan, and heat over a medium-high heat until it is shimmering.

Add the onion and peppers and cook, stirring occasionally, until the onions are golden and peppers have softened, 5-6 minutes. Add the garlic and cook for 1 minute more, then add the mushrooms and cook, stirring once or twice, until they release their water and begin to brown, about 5 minutes.

Reduce the heat to medium. Return the beef to the skillet and stir in the tomato sauce, tomato paste, molasses, chili powder, vinegar, mustard powder, salt and pepper.

Simmer until the mixture thickens, and most liquid is evaporated, 5-10 minutes. To serve, pile about ¾ cup of the mixture onto each split hamburger bun.
