A Vegan Thanksgiving Dish That Will Delight Everyone At the Table

So you have vegan friends or family members joining you for Thanksgiving this year? Don’t let the idea of a restricted diet daunt you. There are so many delicious ways to feed everyone at your table, and it all starts with seasonal veggies and spices.

Cauliflower Coconut Milk Mashers


Makes: 7-9 servings

Cook time: 25 minutes

Ready in: 35 minutes


3-4 medium Yukon potatoes, large dice

1 each small head cauliflower, florets

1 ½ cup coconut milk reduction, reduced by ½

1 oz coconut flakes

1 tablespoon maple syrup

2 tablespoon nutritional yeast

2 teaspoon Korean chili flake

Salt to taste


Steam potatoes and cauliflower until soft. In a stand mix, beat all ingredients except for coconut flakes. Once soft, stir in coconut flake and adjust the seasoning.
