Meal Plan for March Week 4

This month, we welcome backMarta Riverafor more of her meal plans. Marta is a trained chef, mom of twins, and Army wife – and she is also one of our Simply Recipes recipe testers!

Can you believe that we’re already at the end of March? ! I don’t know about you, but it seems as if the new year is flying right by!

Since Easter is next weekend, you may need meals during the week ahead that you can prepare quickly so you can focus on hosting or enjoying your loved ones.

We don’t normally do big meals for Easter at my house, and since we’re a military family and far from relatives, it’s usually a low-key holiday in all respects. Still, I like to make sure that if any of my husband’s soldiers need a place to remind them of home, ours is it. I’m planning to make a nice meal for next week’s Sunday dinner and enjoy being all together.

Spring Succotash

No worries, this isn’t the unappetizing canned version most of us grew up with. This succotash is an homage to spring: fresh, vibrant, and packed-full of flavor. Since there’s ham in this version, it provides more than enough protein for my family’s dinner. It’s surprisingly filling, but if you feel like you need something more, serve it with a nice crusty artisan loaf or grilled chicken.

Edamame can be substituted for the fava beans if you can’t find them fresh. If you like to take your lunch to work, doubling the recipe will not only serve as an entree for tonight’s meal, but will give you helping to take the next day.
